When choosing to give up meat, it can be expected that beans and legumes will become staples in your diet. They are versatile, healthy, filling, cheap, and best of all – delicious.
It’s pretty amazing how many meals can incorporate beans, and I love that I can count on them to achieve meat like substitutes, like the vegan black bean burgers in this post. These black bean burgers have plenty of kick due to the already seasoned beans and addition of jalapeno pepper. If you are super sensitive to heat, tone down the spice with less or no jalapeno- but spicy dishes are my favorites so I went for it!

Spicy Vegan Black Bean Burgers

Ingredients

FOR THE BURGERS
1 flax egg (1 tablespoon ground flax + 3 tablespoons water)
1/2 jalapeno – with seeds removed
1 small white onion
3 scallions (white and green parts diced)
1 package of Better Bean Co. Cuban Black Beans (1 1/2 cups) or any other type of canned black beans drained and rinsed
1/2 cup of gluten free panko bread crumbs
1/4 cup gluten free rolled oats
1/2 cup of red or orange bell pepper, diced.
1/8 cup of ketchup
juice of 1 lime
1/4 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
dash of black pepper

FOR THE TANGY CHIPOTLE AIOLI
1/2 cup vegan mayo
1/2 tablespoon garlic powder
1 teaspoon hot sauce
1 teaspoon smoked paprika
1/2 teaspoon salt
optional: 1 teaspoon ketchup. (sometimes I add ketchup when I don’t want the aioli too spicy, but also feel it needs more to mellow out the mayo taste- test while you combine ingredients to find what you like!)

Instructions

  1.  First, preheat oven to 375 degrees and spray a baking sheet with nonstick cooking spray. Or turn on your grill.
  2.  Next, prepare the flax egg by stirring 1 tablespoon ground flax with 3 tablespoons water.
  3.  Chop jalapeno, bell pepper, scallions and onion then add to a large bowl.
  4.  Add all other ingredients into the bowl, including flax egg, and stir well until burger base is formed.
  5. Use hands to form patties with the black bean base, about 6-8 large patties and place on baking sheet.
  6. Bake for 20 minutes, flip, and cook for another 20 minutes, until outside of burgers are crispy and golden. If grilling, put on grill and monitor as cooking time may vary.

    These buns look delicious! Can you tell me what they are made of? I have heard that sourdough bread is healthy to eat, espedially if made from stone ground flower. I tried tapioca bread and it was dry and crumbly.
