Applesauce Oatmeal Muffins (vegan)

I created these vegan muffins after my daughter was diagnosed with a food sensitivity to eggs. She was getting a lot of digestive upset and once we identified the food culprit her tummy felt so much better. I wanted to bake something healthy and easy that the whole family could enjoy.
I make these muffins all the time. I am all about simple, quick and healthy recipes that the little ones (and grown ups) love to eat. You really can add any fruit puree to these muffins ie. applesauce, pearsauce or mashed bananas. You can also add different spices such as; cinnamon, ginger or nutmeg, as well as vanilla or coconut. The base of the muffin is always the same and you can add in whatever ingredients you wish!
I love simple cooking.

Flax seeds are a known source of protein, fiber as well as plenty of vitamins and minerals. And if using applesauce causes any low FODMAPers to avoid this, using banana puree or even strawberry would work!

Applesauce Oatmeal Muffins (vegan)

Ingredients

Dry Ingredients: 

1 cup large oats
1 cup flour
1/4 cup ground flax seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt

 

Wet Ingredients: 
1 cup applesauce (or fruit puree ie. pear or banana)
1/2 cup milk alternative
1/4 cup coconut oil (melted)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 chocolate chip (optional)

Instructions

  1. In one bowl mix oats, flour, ground flax seeds, baking powder, baking soda, sea salt and cinnamon.
  2. In a separate bowl mix applesauce, milk alternative, coconut oil and vanilla.
  3. Mix wet and dry ingredients together and add in chocolate chips if desired.
  4. Bake for 15-20 min at 375F. Enjoy!
