Tiffany’s zucchini “zoodles” are a fantastic alternative to traditional grain-based pasta for diabetic, low-carb and gluten-free diets, and to otherwise increase overall veg intake. The creamy avocado and earthy walnut oil provide rich flavor and creamy texture -- sources of healthy mono-unsaturated and omega-3 fatty acids. Zucchini is a good source of vitamin C, folate, fiber, magnesium and, surprisingly, a bit of protein (same goes for the avocado!). A hit of garlic and bright lemon brings it all together.

Zucchini Zoodles with Avocado Sauce

Ingredients

3 zucchinis

3 teaspoons fresh lemon juice

1 avocado

2 tablespoons walnut oil (or oil of your choice)

½ teaspoon sea salt

¼ teaspoon freshly ground pepper

3 garlic cloves (minced)

2 tablespoons water (as needed)

Instructions

  1. Spiralize the zucchini into ribbon zoodles.
  2. Cut noodles to desired length, place in large bowl and set aside.
  3. Combine the remaining ingredients, except water, in a medium bowl.
  4. If consistency is too thick, stir in water until smooth.
  5. Using tongs, toss zoodles with sauce when you’re ready to serve it. Enjoy!
