Zucchini Zoodles with Avocado Sauce
3 teaspoons fresh lemon juice
2 tablespoons walnut oil (or oil of your choice)
½ teaspoon sea salt
¼ teaspoon freshly ground pepper
3 garlic cloves (minced)
2 tablespoons water (as needed)
- Spiralize the zucchini into ribbon zoodles.
- Cut noodles to desired length, place in large bowl and set aside.
- Combine the remaining ingredients, except water, in a medium bowl.
- If consistency is too thick, stir in water until smooth.
- Using tongs, toss zoodles with sauce when you’re ready to serve it. Enjoy!
