Kale is an excellent source of beta carotene, vitamins C and E. It is a good source of folate, calcium, iron, and potassium. Kale contains more iron and calcium than almost any other vegetable. Its high vitamin C content enhances the body's ability to absorb these minerals. Kale provides more than 1 gram of fiber and has only 50 calories.

2 cups kale or spinach, or a mixture of both
1 cup coconut milk
1 cup blueberries, frozen
⅛ tsp ground cinnamon
½ tsp pure vanilla extract
2 tbsp grass-fed collagen powder or Paleo Protein Powder
