1 cup rolled oats blended into flour (or use oat flour)

1 scoop Further Food Vanilla Plant-Based Protein Powder

1 scoop Further Food Vanilla (or Hazelnut) Collagen

1 tsp baking powder

½ tsp baking soda

1½ tsp ground cinnamon

1 egg

¼ cup unsweetened applesauce

½ cup plain Greek yogurt

½ cup maple syrup

1 tsp vanilla extract

1 small apple, finely chopped

Optional: chocolate chips or chopped walnuts
Directions
Preheat oven to 350F. Line or grease a muffin tin.
In a large bowl, mix oat flour, protein powder, collagen, baking powder, baking soda, and cinnamon.
In another bowl, whisk together egg, applesauce, maple syrup, vanilla extract, and Greek yogurt.
Combine wet and dry ingredients, then fold in chopped apple. The batter will be thick.
Divide into muffin cups (about ¾ full). Add in some chocolate chips or chopped walnuts for extra crunch/flavor.
Bake for 18-20 minutes, or until a toothpick comes out clean.
