Ingredients
- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- ¼ cup hemp seeds

2 scoops Further Food Lemon Collagen
- Pinch of sea salt
- ¼ cup maple syrup
- ½ lemon, juiced
- 1 lemon zested- maked about 1 Tablespoon lemon zest
- 1 tsp vanilla extract
- 1-2 Tbsp almond milk to thin
- Extra coconut for rolling in
Directions
In a food processor, blend the first 5 ingredients (rolled oats, coconut, collagen, hemp seeds and salt) until well combined and oats are chopped up.
Add the remaining ingredients and pulse until it forms into a sticky dough
Transfer the mixture to a bowl and refrigerate for 20-30 minutes
Role into round balls with your hands and then roll in shredded coconut
Keep stored in the fridge in a tupperware container for up to a week
