I had a bunch of zucchini sitting in my fridge recently, so of course I decided to turn them into some Collagen Zucchini Brownies made with Further Food Collagen! You can eat them fresh out the oven, or if you want to make them last as a dessert “meal prep”, freeze them so you can enjoy them for a few weeks. (If you can make them last that long!)

Using zucchini and bananas in baking is a great way to hide some fruits and veggies into something sweet! Zucchini is a high source of antioxidants, vitamin C, potassium, and magnesium. It also contains pectin, a particular fiber that has been linked to improved heart health and in lowering cholesterol. Pectin also has been shown to have anti-inflammatory properties, which is also found in other fruits and vegetables as well.
