Ingredients
- Half of a medium-sized watermelon
- ½ lime
- 1-2 Tbsp honey

8 Tbsp Further Food Gelatin
Directions
- Measure out the liquid and divide in half.
Scoop out the watermelon and add to a blender with lime and honey. Blend until smooth.
- Transfer half of the liquid to a pot and heat just under a boil.
- To the non-heated liquid, add gelatin (4 tbsp for every cup) and let the gelatin sit and bloom.
- Mix gelatin in with a fork.
- Add in the heated liquid and stir again, removing any clumps.
- Pour this gelatin mixture back into the watermelon half.
- Transfer to the fridge for 2-3 hours.
- Slice as you would a normal watermelon and enjoy! Extras can be kept in the fridge.
