Ingredients
- 1 cup oat flour

1 scoop Further Food Vanilla Plant-Based Protein

½ scoop Further Food Lemon Collagen
- Juice of 1 lemon
- 3 Tbsp pure maple syrup
- 3 drops lemon oil flavor
- 1 cup white chocolate chips
- 1 cup nonfat cottage cheese
- Pinch of salt
- 1 Tbsp coconut oil

2 drops yellow food coloring
- Mint leaves for garnish

Directions
To make, combine oat flour, protein powder, collagen, and salt. Set aside.
- Next, blend cottage cheese, maple syrup, and lemon juice until smooth. Add to your dry ingredients and combine until a dough forms.
- Roll the dough into 8 balls, place on a parchment-lined baking sheet, and freeze for a few minutes while you melt white chocolate and coconut oil in the microwave for about a minute, heating in 20-second intervals and stirring in between until smooth. Add lemon oil and yellow food coloring.
- Coat each ball in white chocolate and top with tiny mint leaves. Refrigerate for about 25 minutes and enjoy! Store in an airtight container for up to 4 days.
