- 1¾ cups almond flour

1 scoop Vanilla Collagen Peptides
- 1 tsp baking soda
- ¼ tsp salt
- 2 eggs
- ¼ cup coconut oil
- ½ cup Greek yogurt
- ½ cup sugar-free maple syrup
- ½ squeezed lemon
- 1 cup fresh strawberries
Directions
Preheat oven to 350F.
- In a large mixing bowl, mix the flour, collagen, baking soda, and salt together.
- In a separate bowl, combine the eggs, oil, yogurt, and syrup together.
- Slowly pour and mix the wet ingredients into the dry ingredients using a spatula until no flour pockets remain. Squeeze the ½ lemon into the batter and fold in the strawberries.
- Pour the batter into a parchment-lined loaf pan and press reserved strawberries into the top, if desired.
- Bake for 40 to 45 minutes or until a toothpick inserted in the center is clean. Let cool for 15 to 20 minutes.
