The long hours and high-stress environment took a toll on my health, but I knew it was more than just exhaustion and stress. After countless appointments with doctors, and many procedures to try and figure out the problem, I was diagnosed with wheat and dairy allergies. I’ve always been a food lover, so not being able to enjoy the things I’ve eaten my whole life really shook me up. I set out to find replacements – new foods to enjoy and love – and I became obsessed. Any time I heard of someone who had received a similar diagnosis to mine, I sent them lists of my favorite products, was compelled to share my experience and all of the things I’d learned with them. Researching my allergies for myself became my passion, and maintaining optimal nutrition while avoiding certain foods became my priority. Not too long after, I decided I wanted to help others do the same.Samantha graduated from the University of Michigan. She completed her post-graduate degree at New York University. Samantha did her dietetic internship at Mount Sinai Hospital in NYC, where she counseled patients with medical conditions including diabetes, hypertension, cardiovascular disease, and cancer.
