Hear me out. It’s like the smooth chocolate-y version of carrot cake. Trust me….if you love carrot cake and you love chocolate, then you will absolutely LOVE this healthy, easy, naturally sweet fudge!  This super quick and easy no-bake carrot fudge is made with Further Food’s Premium Gelatin Powder. The collagen in the gelatin strengthens hair, skin and nails, along with gut healing properties!

Ingredients

7 long and large carrots
1 cup chocolate chips (I used unsweetened but sweetened will give it a sweeter taste)
2 tablespoons Further Food Premium Gelatin Powder

Instructions

  1. Steam carrots until soft (a fork should easily pierce them)
  2. Place carrots in a blender while still hot and puree until smooth.
  3. Add chocolate and Further Food Premium Gelatin Powder and blend again. *If you want it extra chocolate-y, you can add 1/2 cup of cacao powder.
  4. Line a small glass dish with parchment paper and pour batter into the dish.
  5. Place in refrigerator for 2 hours until firm, or overnight. Remove from refrigerator and slice into desired shapes and enjoy!

    I tried this a long time ago when Bethany was promoting Vital Proteins, and the “fudge” was made with butternut squash. If you are a fudge lover, this is not even close to the texture of fudge. If you tell yourself it is a healthful chocolate-y snack, you will be fine. My teen daughter doesn’t like veggies but will eat this as a snack! I switched to Further Foods after the other collagen people were not very nice when they failed to deliver what they promised.
