Smoothies can be a great option for those of us with a sensitive gut because blending the fruits and veggies fully breaks down the cell walls, making it easier for the body to digest and absorb the nutrients. This smoothie contains ingredients that can be adjusted to individual tastes, and other greens, such as kale, can be easily substituted for the spinach. Since I try to avoid as many packaged and highly processed foods as possible, I make my own almond milk for this recipe, but if you have a store bought variety on hand that’s fine too. This smoothie is especially kid-friendly, since you can hardly taste the spinach when combined with fruits and coconut!
