Blackberry Coconut Dairy Free Ice Cream (Raw, Vegan) Print 2 LikeDislike By Nicole English It’s berry and ice-cream season (ok ice-cream is an every season food I know) so I can’t think of a better way to celebrate than by marrying the two into a delicious blend of blackberry super-food ice-cream – raw vegan style.I’ve been on a real super food kick lately so I added some maqui berry powder to give it a nutrient boost as well as infuse an extra kick of colour.The maqui berry is often nicknamed the ‘rainforest blueberry’ and grows wild in parts of South America. It has a rich, vibrant purple colour and has a very mild taste in dried form. This makes it a great addition for smoothies and ice-creams. You can really boost the colour without dominating the taste. As for the health benefits, maqui berries contain the highest levels of antioxidants of any other fruit (tested to date). These antioxidants aid in neutralising free radicals and promote circulation which ultimately makes it an anti-ageing ninja.
