My Cauliflower gnocchi with garlicky mushrooms and okra tomato sauce is the ultimate healthy, quick & delicious comfort food!! I used store-bought cauliflower gnocchi made with only 4 ingredients and it turned out amazing!

Cauliflower Gnocchi with Garlicky Mushrooms & Okra Sauce (Gluten-Free, Paleo)
1 12 ounce bag of gnocchi (I used cauliflower gnocchi)
1/2 cup shiitake mushrooms
1/2 cup okra, sliced
1 teaspoons coconut oil
3 cloves garlic
2 tablespoons tomato paste
salt and pepper to taste
2 teaspoons Daily Turmeric Tonic
2-3 sprigs of thyme
- Prepare the gnocchi in advance, either boiled or sautéed with oil.
- For the sauce: Saute the shiitake mushrooms and sliced okra in a teaspoon of coconut oil over medium heat.
- Once the mushroom juices are released, reduce heat to medium-low and add 3 cloves of garlic, grated.
- Then, add about 2 tablespoons of tomato paste, sea salt, black pepper, turmeric, and thyme.
- Add some water, stir, and toss in the prepared gnocchi.
- Let the sauce cook and thicken for 5-10 minutes. Enjoy!
