My Cauliflower gnocchi with garlicky mushrooms and okra tomato sauce is the ultimate healthy, quick & delicious comfort food!! I used store-bought cauliflower gnocchi made with only 4 ingredients and it turned out amazing!

This dish is quick, easy and SO delicious! Each serving contains only 6g of fat so it is the definition of a guilt-free dish! The cauliflower gnocchi is loaded with fiber, giving each serving 11g, plus there are also 5g of protein so you are sure to be satiated after this non-traditional "pasta" dish!

Cauliflower Gnocchi with Garlicky Mushrooms & Okra Sauce (Gluten-Free, Paleo)

  • Prep Time: 5-10 minutes
  • Cook Time: 10-20 minutes
  • Servings: 2

Ingredients

1 12 ounce bag of gnocchi (I used cauliflower gnocchi)
1/2 cup shiitake mushrooms
1/2 cup okra, sliced
1 teaspoons coconut oil
3 cloves garlic
2 tablespoons tomato paste
salt and pepper to taste
2 teaspoons Daily Turmeric Tonic
2-3 sprigs of thyme

Instructions

  1. Prepare the gnocchi in advance, either boiled or sautéed with oil.
  2. For the sauce: Saute the shiitake mushrooms and sliced okra in a teaspoon of coconut oil over medium heat.
  3. Once the mushroom juices are released, reduce heat to medium-low and add 3 cloves of garlic, grated.
  4. Then, add about 2 tablespoons of tomato paste, sea salt, black pepper, turmeric, and thyme.
  5. Add some water, stir, and toss in the prepared gnocchi.
  6. Let the sauce cook and thicken for 5-10 minutes. Enjoy!

    Your recipes are absolutely delicious sounding and I am planning to make the avocado bites tomorrow.
    I will omit the corn tortillas as we have not had corn in 3 years as it is so highly concentrated with pesticides.
