Ingredients

1 cup mashed banana
- 1 egg
- 4 tablespoons honey
- 3 tablespoons coconut oil (melted and cooled)
- 3/4 cup oat flour

1/2 cup Further Food Organic Plant Based Protein
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger

¼ cup nuts (almonds, walnuts
- Ground nuts, hemp seeds

Directions
Preheat oven to 350F and prepare a lined or greased muffin tin.
In a bowl, mash bananas until smooth. Stir in egg, honey, and coconut oil until combined.
Add in oat flour, protein powder, baking powder baking soda, cinnamon and ginger. Stir until combined.
Pour batter into tins, filled about ¾ to top.
Bake for 15 minutes or until toothpick comes out clean when inserted in center of muffin. Remove and top with optional toppings if using.
