Detox Friendly Cauliflower Pizza

Tonight my parents asked me to cook dinner for them. I know that they don’t really eat the way that I do so I wanted to change it up. This recipe works for people on the detox and those who aren’t!

It’s gluten free, dairy free, salt free, all homemade, super delicious and has very nourishing ingredients for you.

If you are having trouble fitting clean, whole food ingredients into your daily routine, Nikki’s detox cauliflower pizza will be sure to change that. Low calorie, low carb and dressed to the nines in nutrients, this pizza has almost your entire daily intake of vitamin C. Star ingredients include cauliflower, artichokes and mushrooms. Cauliflower contains a surplus of anti-inflammatory agents such as indole-3-carbinol to keep inflammation at bay. Artichokes are at the top of two very important lists including antioxidant and fiber content. Antioxidants protect your immune system, while fiber keeps the digestive system in check. Lastly, mushrooms contain the most vitamin D of nearly any other plant source. Vitamin D is a critical nutrient in the regulation of calcium and phosphorus which translates into healthy bones and teeth.

Detox Friendly Cauliflower Pizza

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Servings: 6

Ingredients

For the crust:
1/2 head cauliflower
2 tbsp almond meal (ground almonds)
1 tsp oregano
1 egg

For the sauce:
1 large tomato
1 small squeeze tomato paste (optional)
1 head garlic
1 handful basil
1 drizzle olive oil

For the toppings:
Handful spinach
Artichoke hearts
Zucchini
Red pepper
Mushrooms

Instructions

For the crust:

  1. Using your food processor or blender, adding your chopped cauliflower to create ‘rice’ (it should be quite fine).
  2. Add to a bowl and microwave 5 minutes, or place on the stove in a pan to cook until soft.
  3. Add to a clean kitchen towel and allow to cool, then squeeze out all excess liquid. The more liquid you get out the better it will stay together when cook.
  4. Add the rest of your ingredients into a bowl with the cauliflower and mix with your hands until well combined.
  5. On a cookie sheet lined with parchment paper, spread your mixture until 2cm thick (roughly).
  6. Bake for 20 minutes or until it’s lightly browned, at 350F.

For the sauce:

  1. Blend all ingredients until smooth.
  2. Add to your pan on the stove and cook until heated through.
  3. After your pizza crust has been in the oven and is cooked, take out and add the sauce.

To assemble:

  1. Chop your hearts, zucchini, mushrooms and red pepper.
  2. Add to a pan with a dash of water and cook for 2 minutes until slightly tender.
  3. This will help the cooking process on the pizza.
  4. Add all ingredients + spinach on top of your pizza sauce then place back in the oven another 5 minutes.
  5. Allow to cool before eating.
