Further Food Commentary:
Choosing unsweetened or sweetened shredded coconut will of course dictate the nutrition profile, but provides additional ways to use--in savory and sweet dishes. 1 ounce/1 serving contains 128 calories, 0.9 g of protein, 14.5 g of carbohydrates and 7.8 g of fat, 7.4 g of saturated fat. Both types of coconut are very high in saturated fat, with the unsweetened coconut providing 80% of the daily value (DV) and one ounce of sweetened coconut providing 37% DV per ounce. A high consumption of saturated fat can increase risk for obesity, high cholesterol, and heart disease. In just one serving, macadamia nuts contain high amounts of vitamin B1 and magnesium with a net of 58% of what you need in manganese and 23% of recommended daily intake of thiamin. Of the 21 g of fat found, only 3 g are saturated fat.

Collagen recipe
Ingredients
- 1 cup cashew milk (or milk of choice)
- 1 cup cold water
- 1 lime, cut into ⅛’s
- ½ frozen banana
- ¼ cup shredded coconut, unsweetened
- ¼ cup macadamia nuts, unsalted
- ¼ cup frozen pineapple
- zest and juice of additional lime
- 1 scoop Further Food Premium Marine Collagen
- 1 to 2 cups ice
Directions
Place cashew milk, water and lime segments into blender and pulse 4-5 times to coarsely chop but not completely pulverize. Strain through fine mesh sieve into a clean bowl, rinse blender out and pour “lime infused” milk back into it.
Add remaining ingredients and blend until the consistency you want is reached. Add as much or little ice as you like. More ice will give you a thicker consistency, possibly requiring a straw! Whereas less ice will make it more “sip-able” ~~ either way, find a great spot to take a few minutes for yourself and escape away for a few minutes to the islands!
