Matcha Carob Muffins (Dairy-Free, Gluten-Free, Paleo)


I took my love for matcha to a whole new level with these matcha and chocolate chip muffins.  These muffins are so easy to make-just mix all the ingredients. These paleo matcha muffins are perfect if you are stuck in a breakfast rut and need something new and exciting for mornings. Each muffin contains only 15g net carbs so they will not send your blood sugar into a spike which would be no way to start the day! They also contain 4g of protein from the collagen peptides and 3g of fiber per muffin. I suggest making a batch of these on Sunday so that you will be set with breakfast for your entire workweek!

Matcha Carob Muffins (Dairy-Free, Gluten-Free, Paleo)

  • Prep Time:5 minutes
  • Cook Time:20 minutes
  • Servings: 9


2 flax seed eggs (or 2 normal eggs)
1/3 cup organic maple syrup
1/4 cup coconut oil
2 tablespoons matcha of your choosing such as Mindful Matcha
1 scoop Further Food Collagen Peptides
2 tablespoons coconut sugar
1/3 cup sunflower butter
1/4 cup coconut milk
1 cup almond flour
1/4 cup coconut flour
1.5 teaspoons baking powder
a dash organic cinnamon
a handful of carob chips


  1. Preheat oven to 350 F.
  2. Mix wet ingredients and then add in dry. Stir and place in lined muffin tins.
  3. Bake for about 20 minutes!
