This recipe is might as well be considered magic. One moment you have a bunch of ripe bananas. And the next? A deceptively decadent batch of creamy, fluffy “ice cream.” You’d never know that one simple, healthy ingredient could instantly transform into such a delicious and satisfying dessert– until you try this! One summer day I was trying to figure out what to do with an overly ripe bunch of bananas. It was too warm for banana bread, so I decided to throw them in the freezer. Then, I pureed them in a food processor, and the result was the most unbelievably smooth one ingredient ice cream I’d ever tasted. My dinner guests were in awe when I told them it literally only took one (nutritious) ingredient to create this sweet treat.

Bananas literally steal the show in this one-ingredient recipe, making this dessert a naturally sweetened, completely fruit-based treat. Bananas are touted for their high content of the mineral potassium, which plays a key role in heart health. Additionally, they boast a significant amount of dietary fiber. In particular, water soluble pectins, a specific type of fiber present in bananas, aids in digestive processes. If you choose to add a dash of cinnamon to this recipe, you’ll get an additional boost of nutrition. Cinnamon plays a role in blood health, helps to control blood sugar and defends against microbes.

Ingredients

4 ripe bananas
1/2 tsp vanilla extract (optional)
1/4 tsp cinnamon (optional)

Instructions

1. Peel the bananas.
2. Cut the bananas into small slices.
3. Freeze for 1-2 hours on a plate or tray.
4. Blend in a food processor — scraping down the bowl when they stick. Add vanilla and/or cinnamon, if desired.
5. Watch as the bananas magically transform into ice cream!
6. Serve in bowls with fresh fruit, whipped cream, sprinkles, chocolate or caramel sauce– whatever you’d like.
7. Freeze any leftovers and process again when ready to serve.
