Open Faced Smores with Bacon and Crystalized Ginger

If it’s summertime camping with bonfires, or if it’s winter and you are cozied up on the couch, watching the snow flurries outside of your window, why don’t you jazz up your night and have a smore?

I know, I know – if you are dealing with food sensitivities this delicacy may be out of the question, but it doesn’t mean with a few tweaks you cannot have one! Here is some advice on how to have your smore, and eat it too.

Here is the secret: The trick is to buy the three main ingredients without preservatives, and keep the serving small. Your local health store, Whole Foods, or Amazon Prime will have all these ingredients. Also, listen to your body and if you cannot have one of these ingredients, replace it with something you can have, such as peanut butter, caramel, nuts, prosciutto, goat cheese or maybe even fruit. Don’t be afraid to get creative – It will taste just as great!

Smores with bacon and crystallized ginger are definitely an indulgent treat, but paying close attention to the ingredients of each component will help you create a dessert that won't wreak havoc on your body. For some, finding bacon without nitrates is a must because it can cause headaches or migraines, and there is some research to suggest that nitrates may contribute to cancer development. Ginger, on the other hand, is known for its ability to help settle an upset stomach, which may be helpful after a meal (or too many smores!). For an extra boost, why not grate some fresh ginger on top of your open faced smores?

Open Faced Smores with Bacon and Crystalized Ginger

Ingredients

1 ginger snap (gluten free)
1/4 organic chocolate bar
1 marshmallow
1/4 strip bacon or turkey bacon
crystalized ginger or ginger candies

Instructions

  1. Lay a ginger snap down on a plate.
  2. Take a few pieces of organic chocolate and lay it over the ginger snap
  3. Take a small marshmallow heated on the stove and cover the chocolate. The heat of the marshmallow should melt the chocolate. If not, feel free to pop it in the oven or toaster oven for 1- 2 minutes.
  4. Top with a piece of fully cooked bacon, and sprinkle with bits of crystalized ginger or ginger candy. The candied / crystalized ginger can be layered underneath the marshmallow as well.
  5. Pick up and enjoy!
