This bisque, using simple, commonly found ingredients, is a quick and easy way to get tons of vitamin C and to use up basil that’s abundant in the summer. It makes a great side for sandwiches, or topped with corn and other veggies, can make for a light main dish. Free of gluten and other common food irritants, it’s a soothing delicious soup for IBS sufferers. It can even be served hot or cold!

Roasted Vegetable Bisque

Ingredients

2 cans (juice and all!) tomatoes (diced)
1 small yellow onion (cut into quarters)
1/2 bell pepper (cut into large chunks)
3 stalks celery (chunked)
4 cloves garlic (cut in half)
4 large basil leaves
salt and pepper (to taste)
organic cream (for topping)
Optional: organic corn for some texture

Instructions

  1. Quickly sauté all the veggies in a large pot over medium high heat with a splash of olive oil (or butter).
  2. Cook until onions look a bit translucent.
  3. Add the tomatoes and then scoop everything into your blender/food processor.
  4. Blend until your bisque is nice and smooth with no obvious chunks.
  5.  Pour directly into bowls or place back on the stove for additional heating.
  6. Add a tad of cream to the dished soup and a little corn (or whatever you think would go well) and enjoy!
