Sweet Potato Chocolate Brownies

It is impossible not to adore these sweet, gooey, soft, chocolatey brownies. Warm or cold, they are a deliciously indulgent treat! This recipe is made with totally natural, unrefined and healthy ingredients: nutrient-dense sweet potatoes, antioxidant-rich maple syrup and raw cacao powder, dates, almonds and buckwheat flour (gluten free). These vegan brownies are healthified to the max but taste like traditional brownies…well for me even better!

Sweet potatoes are high in vitamins, such as vitamin B6 which helps reduce the chemical homocysteine that contributes to hardening the arteries and blood vessels; they are packed with minerals such as magnesium which is the relaxation and anti-stress mineral; and they contain twice the amount of fiber of white potatoes.

Sweet Potato Chocolate Brownies

Ingredients

2 large sweet potatoes (600-700grams)
80 grams or 1/3 cup ground almonds
100 grams or 1/2 cup buckwheat flour
14 medjool dates
4 tablespoons raw cacao powder
4 tablespoons pure maple syrup
100 grams or 1/3 cup + 1 tablespoon raw dark chocolate (crumbled)
1/2 teaspoon salt

Instructions

1. Pre-heat oven to 180°C.
2. Peel sweet potatoes, cut them into chunks and place them in the oven until they become really soft.
3. Add them to a food processor with pitted dates and pulse. Little by little add all the others remaining ingredients: cacao powder, maple syrup, ground almonds, buckwheat flour and half of the raw dark chocolate.
4. Place the batter into a pan covered with parchment paper and crumble the remaining dark chocolate on the top.
5. Bake for 25-30 minutes and let cool for about 15 minutes. Slice into squares and enjoy!
