To add sweetness to this drink, we used coconut sugar rather than typical white sugar! Coconut sugar has a low glycemic index. The glycemic index (GI) is a measurement evaluating carbohydrate-containing foods and their impact on our blood sugar and glucose levels. Coconut sugar ranks just 35 on the index as opposed to the regular table sugar which ranks between 60 to 65.

Whipped Collagen Coffee

Ingredients

2 tablespoons instant coffee or espresso

1.5 tablespoons coconut sugar

1 tablespoon Further Food Collagen

2 tablespoons boiling water

1-2 cups boiling milk of choice

Instructions

  1. Put coffee, sugar, collagen and water in a bowl. Whisk using a hand mixer for 2-4 minutes until foamy. Scrape down sides of bowl.
  2. Pour milk into your favorite mug and then top with the coffee mixture.
  3. Stir and enjoy!
