My Story

I have been struggling with Chronic Lyme Disease for many years, and it is believed that I was first infected around the age of 9.  Though I had been experiencing Lyme-related symptoms on and off since 2009, it was not until 2011 that I hit a brick wall and my body completely deteriorated.  Even before my diagnosis of chronic, late-stage neurological Lyme Disease, I knew food was a big factor in one’s overall health.  Because of all the health complications that stem from Chronic Lyme Disease, I find it very useful to extensively research information about both the human body as well as how food affects it.

Through this self-taught knowledge, I have been able to help my body in the long process of healing, from all of the damaging effects Lyme spirochetes produced.  I follow a paleo, ketogenic diet by choice, but also part of my IV and diet medical protocol.  Because my body’s histamines react to almost everything due to an overgrowth of MAST cells, reversing food allergies has become a big part of my journey. Though I cannot eat all of the recipes I make, I find joy in simply making and serving others with my food. I believe that food is medicine, and although “paleo” eating is considered another “diet,” to me it is really, truly just a healthy lifestyle to help my body heal and recover the best that it can.
