Banana Berry Nice Cream (vegan, dairy-free)

Print

My sweet tooth has always held up ice cream as the holy grail of desserts. Add chocolate into the mix? I may marry the bowl. Fast foward one year and one dairy-dissing stomach, however, and my taste buds have gone bananas…in the best of ways.

I’d heard of banana nice cream before from fellow allergy-friendly blogs or Instagram posts, but I always figured it would taste more like fruity ice than the Dairy Queen of my dreams. One desperate summer night, though, I threw some frozen naners, a little water, and a lot of hope into my blender…and out popped a delicious bowl of frozen delight.

Packed with nutrients and easily adaptable to every pair of picky tastebuds…it’s easy to see why I devour a tower of nanaicecream every day for breakfast or a post-workout treat.

Further Food Commentary:

This recipe has tons of fruits and veggies, making it a healthful treat that packs quite a punch of vitamins, minerals and anti-oxidants. The coconut and avocado add healthful fats, and the chia seeds and yogurt add some protein. This is a terrific mini meal, especially if it tastes as good as it sounds.

Banana Berry Nice Cream (vegan, dairy-free)

Stars ( Reviews)

  • Prep Time:15 mins
  • Cook Time:0 mins
  • Servings: 1

Ingredients

1 tablespoon chia seeds (ground for a smoother texture)
2 tablespoons coconut flour
3 tablespoons vanilla greek yogurt (OR avocado for dairy-free version)
one heaping handful (or more if tolerant) of greens
handful of frozen fruit (chopped bananas, apples, peaches, pears, berries, grapes, etc)
1/4 cup coconut milk

Optional:
Any desired flavor add-ins (powders like cacao, acai or maca; vanilla; spices; extracts; stevia drops, etc)
optional extra veggies (beets, celery, broccoli, zucchini, squash, etc) – about half as much of these as fruit to keep the smoothie sweet!

Instructions

  1.  Gather and add all ingredients to blender.  I like to layer mine by frozen fruit/vegetables, flour and chia seeds, leafy greens, more frozen fruit/vegetables, a scoop of yogurt and/or avocado, and finally any spices/flavorings plus the liquid of choice. Then push the button and ready your tastebuds for some healthy, allergy-free ice cream!
  2. Enjoy!

Note:
For different flavors try this out:

  1. For berry beet, use bright red fruits (like cherries, strawberries, raspberries and pomegranate seeds) plus a few pieces of chopped frozen beet to blast your nicecream off into the world of frozen flamingos! And if you have acai powder on hand, only a small bit boosts the antoxidants and the tart flavor.
  2. For citrus greens, I mix the base recipe with 1/4 of an avocado, a couple handfuls of greens, and lots of green fruits and veggies like apple, melon, zuchinni, celery, and cucumber. Finally, slices of orange or lemon give it a tropical twist!
  3. And, if you need a Holiday kick, try cacao-peppermint banana ice cream. Follow the citrus greens base to whip up a Christmas tree color, then add a few drops of peppermint extract, a teaspoon or so of cacao powder, and string on sliced up strawberries, blueberries and pomegranate seeds for some festively edible decorations!

OOO. I’ve been trying to cut down on the added sugars and Nice cream has become my go to dessert. I use raw cocoa powder because, duh, CHOCOLATE. I don’t miss ice cream at all, and I feel so much better eating a dessert like this.
