Let’s be honest here – everybody could probably use to eat more vegetables in their diet, with all those vitamins and nutrients that keep our bodies feeling awesome.

Historically touted for their superior beta-carotene content (a vitamin A precursor), carrots are a nutritious source of powerful antioxidants. Furthermore, the beta-carotene found in carrots is more bioavailable than other forms of beta-carotene; this means you get more bang for your buck. Aside from anti-cancer and cardiovascular benefits gained from eating these antioxidant-rich root vegetables, the vitamin A is also integral to vision health and bone metabolism.

In a large mixing bowl, toss the carrots with oil, then spread them on a large baking sheet or cast iron skillet.
Season with garlic salt on both sides.
Pop in the oven and roast for about 45-50 minutes, until completely tender in the middle. No need to turn them!

*to make your own, combine ½ teaspoon salt + ¼ teaspoon garlic powder + ¼ teaspoon onion powder + 1 teaspoon dried parsley
