I used my teenage daughter as a taste-tester for simple, clean cookies. She gave them two thumbs up, which I think is a ringing endorsement for a healthy dessert.

Treats like these cookies are great for people with many different dietary restrictions. Maple syrup provides antioxidants and essential minerals like zinc and manganese that refined sugars are lacking. Coconut adds bulk, but keeps the carbohydrate count low, and using egg as a binder ups the protein. Cinnamon is great for blood sugar regulation, so even though you’re indulging in a sweet treat, you’re less likely to crash and burn shortly after.

Easy 5-Ingredient Coconut Chocolate Cookies (Gluten-Free, Dairy-Free)

Ingredients

1 cup coconut (shredded or flakes, unsweetened)

2 1/2 tablespoons pure maple syrup

1 egg

1 teaspoon cinnamon

1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients together in a large bowl.
  3. Scoop out dough into tablespoon-size balls and drop on parchment lined cookie sheet.
  4. With a fork, score and lightly flatten the cookies.
  5. Bake about 20 minutes or until golden brown.

Note: Check the oven after 15mins as the coconut can get burnt depending on the size of the flakes you use. These cookies will be very delicate when they come out of the oven, but will firm up as you let them cool.

    Super easy and delicious! I also cut the amount of chocolate chips in half and found that it was still a little chocolate heavy–can’t imagine a whole cup! I found the baking time a little long; I checked mine at 20 mins and they were browning nicely so I took them out at about 22 mins.

    Yum! Finally made these tonight with just a touch of maple syrup and a quarter cup of chocolate chips. They were delicious and stuck together just fine. I just squeezed them together before scoring them. Thanks for the idea!

    I too have made these multiple times! They are so easy, and so addictive! I added some chia seeds (2 tbsp) for crunch, and also did 1/2 the amount of chocolate chips.

    AND since I don’t like my cookies too sweet, I made a version where I cut the chocolate chips by half (so only 1/2 cup) and used 1 1/2 tbsp of honey. Came out really tasty!

    LOVE! SO SO easy. I’ve made these 3 times now they were a hit every time! So ‘lazy girl’ easy – 5 ingredients – mix – spoon out – bake! Delicious!
    (PS – I used coconut flakes instead of shredded)
