Carrot Cake Oats

As much as I love overnight oats, chia pudding or even just a big bowl of fresh fruit to start my day, my favourite will always be a big bowl of porridge/oatmeal. It’s delicious, filling, and so comforting. I love just normal oats topped with berries, banana or some nuts, but I thought I’d mix it up and see if I could add some vegetables into my mornings! And voila, carrot cake oats was born…and who doesn’t like carrot cake?!

Finally, a healthy way to eat cake for breakfast! This fun oatmeal recipe is a great way to incorporate vegetables into your morning. While oats already have tons of fiber on their own, adding carrot, bananas, and walnuts ensure that you’ll stay fuller for longer. It’s also completely gluten-free, so even those with Celiac disease or gluten sensitivity can enjoy this sweet breakfast!

Carrot Cake Oats

Ingredients

1/2 cup of oats

1 cup of milk or 1/2 cup milk and 1/2 cup water (I use coconut, lactose free or almond)

1 carrot (grated)

1/2 banana (mashed)

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/2 teaspoon mixed spice

handful of sultanas

few chopped walnuts

Instructions

  1. In a pan, add in the oats, carrot and milk. Let it soak for approx. 10 minutes.
  2. After this time, turn on the hob and add the mashed banana, spices and sultanas into the pan.
  3. Cook for approx 15-20 minutes, until it reaches the consistently you like.
  4. Top with the other half of the banana and the chopped nuts. Enjoy!
