Easy Chicken, Spinach, and Mushroom Lunch Bowls

The answer to the question, “What’s for lunch/dinner?” is often, “What from the fridge can I throw into this bowl and warm up?” On many occasions this leads to some uninspired or downright weird combinations (beets, olives, and proscuitto, for example). This time, however, we struck gold 🙂

Quick, weeknight recipes are a must in busy households and here’s another to add to your repertoire. This recipe could not be any easier or more nutritious! Chicken is a great source of lean protein and the vegetables are an amazing source of vitamins A and C. This is clean eating at its finest: low in sodium, cholesterol and calories, you’ll find yourself making this repeatedly, and you’ll feel great about it!

Easy Chicken, Spinach, and Mushroom Lunch Bowls

  • Prep Time:5 minutes (plus 20 minutes to grill chicken ahead of time)
  • Cook Time:2 minutes (microwave) - 10 minutes (stovetop)
  • Servings: 2

Ingredients

4 mushrooms (white or cremini, thick sliced)
2 cups baby spinach (sliced or torn into smaller pieces)
1.5-2 grilled chicken thighs (sliced)
handful of sprouts
1 teaspoon olive oil
1/2 teaspoon salt
Optional: This also great with a handful of chopped broccoli added to the bottom of the bowl.

Instructions

In the Microwave:  (I know this isn’t the best option, but I include it here because it’s FAST)

  1. Layer ingredients into 2 bowls: mushrooms, spinach, chicken.
  2. Drizzle with olive oil and salt.
  3. Cover with a moist paper towel and microwave for 1 min 30 seconds.
  4. Top with sprouts, and enjoy!

On Stovetop:

  1. Heat olive oil in a pan.
  2. Add sliced mushrooms and cook for 1-2 minutes.
  3. Add sliced grilled chicken thighs.
  4. Cook until chicken is warm.
  5. Remove from heat and add spinach.
  6. Divide and top with sprouts.

But, aren't people with celiac disease skinny and malnourished? Well, yes. Unless you're FAT and malnourished. I thought I was just a fat kid. I assumed I had no allergies and was destined to a life of plus-size clothing. When I met my girlfriend, I had my eyes opened to the world of food allergies. She has anaphylaxis-level allergies to peanuts, tree nuts, and shellfish, and a few non-ana allergies. I adjusted to this very easily. 
 
Then I got hit with a dairy whammo: migraines, then hives, then asthma attacks. Boo, but whatever, add it to the list. Kicking dairy drastically improved my weight loss, and then I started reacting to gluten. For some reason, I FREAKED OUT about this, but it got better. My celiac diagnosis was pretty anti-climactic. I paid $40 and waited 2 months to get in to see a GI doc who said, "nice job diagnosing yourself. I'll confirm with bloodwork." When I FINALLY got in to see a naturopath, I got the rest of the news: leaky gut, adrenal issues, and candida overgrowth. duh! I probably could have figured that out, too, if I hadn't been so overwhelmed (and tired from trashing my adrenals #graduateschool). And now? Now I feel amazing. I'm still healing, but health has never been this delicious.
 
Throughout this journey, I've spent my time in graduate school (what should I actually do with this PhD in Chemistry?), the Institute for Integrative Nutrition (yay, Health Coaching!), and working a full time office job while building my health coaching business.
