This is my go-to juice every morning. It gives me a ton of energy and has incredible nutrient quantity. I do switch out collard greens for kale every other day to mix it up and because I have read in many books that you shouldn’t juice the same dark leafy green everyday. The optional Further Food Collagen helps improve digestion and to strengthen bones and joints.

Further Food Commentary:

Juicing is an efficient way to get a concentrated amount of nutrients from a large volume of vegetables, and fruits, into the bloodstream quickly. Because the body doesn’t have to go through the process of breaking down and thoroughly digesting each component, it gets to utilize the nutrients more quickly.

The juice of green, leafy vegetables, like kale, is full of antioxidants, vitamins A, C, K and a host of Bs, as well as calcium, iron and copper. Juice of apples has been shown to reduce the risk of colon, breast and skin cancer, and has also been linked to lowering the risk of Alzheimer’s, likely due to its ability to reduce beta-amyloid proteins that cause plaque in the brain. Lemon juice is full of vitamin c and bioflavonoids that scavenge free radicals in blood vessels, potentially helping to reduce risk for cardiovascular disease and stroke, which is important for Marisa and others with lupus who are inherently at a higher risk for both.

It is important to note that for those with hypothyroid issues, raw kale and collards on a regular basis can cause issues, because of goitrogenic properties that could reduce thyroid function.

Ingredients

4 large collard green or lacinato (dinosaur) kale leaves

2 large Fuji or Gala apples (can substitute pears)

1 to 2 inch nub of ginger (skin removed)

4-5 stalks of celery

1 and a half cucumber (skin removed)

optional: 1 scoop Further Food Collagen

1 large lemon

Instructions

  1. Juice all ingredients and enjoy.

* Note, this is a pretty intense juice because of the collard greens and/or kale. Some people prefer a little more apple in the beginning when first trying this out. But don’t overdo it!
