Paleo Meatballs with Easy Tomato Sauce

I traveled for a long weekend to work in person with my kettlebell coach, Sara, and we decided to make meatballs one night. We mixed a few things together and came up with these! I modified them to be paleo and am pairing them with an easy “sauce” in this recipe. You can easily pour your favorite healthy pre-made sauce over the meatballs in the crock pot before turning it on.

Further Food Commentary:

The substitution of almond flour for regular breadcrumbs ups the protein content of this already protein-packed dish, and lowers the sugar and carbohydrate content making them gluten-free (and diabetic friendly, too!). Using veggies in the meatball mix adds bulk without upping the calories, and adding sausage meat increases the flavor and reduces the need for added salt. These are sure to be filling, and crock-pot meals are a great and easy way to make a home-cooked meal when in a time crunch.

Paleo Meatballs with Easy Tomato Sauce

Ingredients

For Meatballs:
2 medium eggs
1/2 medium onion (diced)
1/2 cup zucchini (shredded)
4 cloves garlic (minced)
1/4 cup almond flour
1 teaspoon dried oregano
1 teaspoon sea salt
1 pound ground chicken
1/2 pound spicy chicken italian sausage (uncooked and removed from casings)

For Tomato Sauce:
28 ounce can crushed tomatoes
1 cup tomatoes (diced)
1 teaspoon extra virgin olive oil
5 cloves garlic (peeled and smashed)
fresh ground black pepper and sea salt (to taste)

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl whisk eggs.
  3. Mix in onion, zucchini, garlic, almond flour, dried oregano and salt.
  4. Add ground chicken and chicken sausage (removed from casings) and mix thoroughly.
  5. Scoop ground chicken mixture, round into balls and place on parchment lined baking sheet.
  6. Bake in oven for about 20 minutes until browned and cooked through.
  7. Remove from oven and layer meatballs in crockpot.
  8. Pour crushed tomatoes and diced tomatoes directly over meatballs in crockpot.
  9. Heat olive oil in a small frying pan and add smashed garlic.
  10. After a slight sauté, add oil and garlic to crock pot.
  11. Season with pepper and sea salt.
  12. Cook on low in crock pot for 4-6 hours.
