I needed to come up with a quick recipe for dinner and broccoli was one if the few items I had in my fridge. Everyone loved the garlicky taste the infused olive oil gave to the dish. Broccoli has many health benefits and it is part of the cruciferous family. It is loaded with various vitamins such as iron, protein, calcium, chromium, vitamin A and vitamin C.

Compared to raw broccoli, when cooked, broccoli provides special cholesterol lowering benefits and has a strong impact on the body's detoxification system. While it's a member of the cruciferous vegetable family, along with brussel sprouts, cauliflower and cabbage, a cup of broccoli contains as much vitamin C as an orange and is a source of fiber, zinc, potassium, iron, magnesium, beta carotene, vitamin B1, B2, B3, B6 and K. Additionally, the 'healthy' monounsaturated fats found in olive oil makes it the ideal oil for cooking. Also, oleocanthal, the phytonutrient that resembles the effects of ibuprofen aids in the reduction of inflammation.

Ingredients

1 head fresh broccoli
2 tablespoons garlic infused olive oil
1 tablespoon of salt-free lemon pepper seasoning
¼ teaspoon Pink Himalayan salt (to taste, optional if paleo)

Instructions

1. Preheat oven to 400 degrees.
2. Cut broccoli into florets and toss with garlic oil, lemon pepper and salt.
3. Roast on baking sheet 15-20 minutes, until broccoli is crisp tender and caramelized to your liking.

    Hi, I loved this recipe. My whole family thought it was very tasty. My only concern is that I am on a keto plan and the Carbs listed say 22g. Is that correct?
