I love ice cream so much but have been trying to avoid dairy and refined sugar since it can cause inflammation. So I decided to create my own healthier version of ice cream which is why I created this delicious Strawberry Coconut Nice Cream! I also wanted this recipe to be great for my gut so I added in a scoop of Further Food Collagen Peptides.

Can you even believe an ice cream without refined sugar and no dairy? Coconut has a lot of great benefits including: anti-oxidant and anti-inflammatory, antibacterial, and can keep you feeling fuller for longer. Coconut is also full of MCTs which can be helpful if you have fat malabsorption problems. Strawberries are another great ingredient to add here. They are naturally sweet so they can help give this recipe more of a traditional ice cream feel. They also have a good amount of vitamin C to keep your immune system healthy to fight off those summer sicknesses! Strawberries also have a low glycemic index which means your body has an easier time handling its natural sugars. What a perfect summer recipe.

Ingredients

1 cup of frozen organic strawberries
2 tablespoons of creamed coconut (or coconut butter)
1 scoop of Further Food Collagen Peptides
Optional: Top with unsweetened shredded coconut

  1. Add all ingredients to a food processor and pulse, scrapping down the sides occasionally until a smooth ice cream texture is achieved.
