I am obsessed with my crock pot. Cooking a whole chicken in the crock pot (slow cooker) is the best way to lock in the flavor and the meat literally falls off the bone. I can put it into the pot in the morning, and not have to think about it again until dinner time. Add some sauteed greens or salad, and dinner is ready for the whole family!

The Best Slow Cooker Chicken

Ingredients

whole organic chicken (about 4 pounds)

1 onion (sliced)
3-4 garlic cloves
1/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon italian seasoning
1 -2 cups broth

 

Instructions

  1. Rinse chicken inside and out, and pat dry. Sprinkle generously with kosher salt, garlic powder, and paprika. Sprinkle lightly with Italian seasoning.
  2. Place onion slices on the bottom of the crock pot or slow cooker.
  3. Add chicken on top of the onions.
  4. Put garlic cloves (whole) into the crock pot.
  5. Pour broth around the chicken, enough to be about 2 inches deep.
  6. Cover and cook on low for about 8 hours.
