I’m on a mission this week to share healthy, easy, diabetic friendly snack ideas with my blog followers. This salad is delicious, healthy, and filling on its own. It’s also really good on top of your favorite protein, not to mention it’s paleo and vegan!

This simple salad is a great side dish. The avocado provides beneficial fats and fiber. And the tomatoes provide tons of vitamins. The onions and garlic are good for those beneficial bugs in our gut. And yes this salad is very low in carbs so it will stabilize blood sugar.

Ingredients

1 cup avocado (chopped)
1 cup tomatoes (chopped)
1 cup fresh basil (chopped)
2 teaspoon dehydrated minced onions
1 teaspoon garlic powder
1 tablespoon fresh lemon juice
1 teaspoon pink himalayan salt

  1. Combine all ingredients.
  2. Mix well and enjoy!
