Tomato toast 2 ways is an inspiration recipe when you are not sure what to do for breakfast.

It’s just a reminder that tomato and toast go so well together and you can make some good food using them.

Goji berries were once limited to ethnic grocery stores, but now touted for their antioxidant properties and as a good source of vitamin A, vitamin C, iron and dietary fiber, they're more ubiquitous than ever. Additionally, since they can help boost the immune system, improve brain function and reduce risk for heart disease, they're a great addition to any dish. Often times the best, most nutritious foods are in the simplest forms. Take walnuts, for example. At an ounce serving a piece, they’re packed with the perfect amount of protein, healthy omega 3 fats, fiber, plant sterols and antioxidants.

Tomato Toast 2 Ways

Ingredients

2 slices of your favorite bread (I used rye sourdough bread)
1 cup of red and yellow tomatoes, sliced
2 slices of bacon
1 tablespoon tahini
few slices of brie or camembert cheese
few walnuts
few goji berries
dried chilli flakes (optional)
salt and pepper

Instructions

  1. Toast the bread to your liking.
  2. Heat good non-stick pan on medium heat, roughly chop the walnuts and toast until golden.
  3. Use the same pan to fry the bacon.
  4. Wash and slice the tomatoes.

Assemble your toasts:

Toast 1: put slices of the cheese on the toast, top with sliced tomatoes, sprinkle with a bit of salt, toasted walnuts, goji berries and chilli flakes.
Toast 2: put slices of bacon on the toast, top with sliced tomatoes, tahini a bit of salt and black pepper.
