I immediately decided that if I was going to feel better about myself, I needed to make some changes. Ever since then, I’ve been experimenting with different ways of eating healthfully. I started by simply cutting out soda, and quickly lost ten pounds. After I graduated Bucknell University with a Bachelor of Science in Biology, I went on to study nutrition at Columbia University Medical Center Institute of Human Nutrition as a transition to medical school. While at Columbia, I discovered my passion for nutrition, which also helped me form an even stronger interest in healthy eating and living. Now studying to be a registered dietician at Teacher’s College, I’ve gained a love for cooking and creating new recipes. I am always looking for ways to put a healthy twist on food, and how to cook easy, simple dishes that can be used for lunch or dinner the next day. If there is one thing I’ve learned so far, it’s that meal prepping can be a lifesaver! When I’m not hard at work at Further Food or in school, I love to run, lift weights, walk my dog, and create new delicious, healthy meals!
