Black Rice with Capers and Hemp Hearts

This recipe was inspired from trying to make lunch on day when all I had was leftovers. I had a container of cooked Chinese black rice (also called forbidden rice), from a previous day. Forbidden rice is a staple in my Multiple Sclerosis diet. So I added healthy fats from the pine nuts as well as extra punch of protein from hemp seeds!

This recipe has a great combo of carbohydrates, healthy fats, and protein. While the major protein source here is the nuts, black rice or purple rice has more protein and fiber in it than white, brown or red rice, and also contains the highest amount of antioxidants of any rice. More specifically, the anthocyanin content of black rice is higher than that of any other grain. This is especially important for those with Multiple Sclerosis (MS), as anthocyanin has been correlated with a reduction in inflammation. The nuts used in this recipe provide protein in addition to healthy monounsaturated and polyunsaturated fats, which also help to reduce inflammation.

Ingredients

1 cup forbidden rice (cooked)*

2 tablespoon hemp nuts

2 tablespoon pine nuts

1 tablespoon capers


*black rice uses a ratio of 2 cups water to 1 cup rice. If you are preparing rice specifically for this recipe boil 1 cup of water, add ½ cup rice and cook for 20-25 minutes until water is absorbed, and let cool.  

Instructions

  1. Combine hemp hearts, pine nuts and capers to cooked rice.
  2. Enjoy!
