No vegetable should go to waste. This is also known as my clean out the refrigerator soup and it always turns out amazing! Be creative and try using your own leftover ingredients!

If you’re not yet acquainted with black rice, Julie’s sausage and veg-heavy soup is a great introduction to this unique variety. Black rice offers a nutritional one-two punch with antioxidants in the outer bran and its antioxidant purple and red pigments, called anthocyanins, linking it to decreased risk of heart disease and certain cancers, as well as improvements in memory and blood pressure.

This recipe requires minimal prep upfront and lets the crockpot do the rest, so you can go about the day as the ingredients slowly marry together to create an intensely flavorful, nourishing meal.

*Watch your sodium intake by choosing a low- or no-sodium added broth and, if you can find it, a lower sodium sausage.

Black Rice, Chicken Sausage Veggie Crock Pot Soup

Ingredients

4 cups vegetable broth

1 package chicken sausage

½ cup uncooked quinoa

½ cup uncooked black rice

1 bag of greens

¼ yellow pepper

¼ red pepper

¼ orange pepper

¼ onion

¼ cup lemon juice

2 tablespoons garlic (minced)

1 teaspoon coconut oil

 

Spices to taste:

Turmeric

Curry

Coriander

Ginger

Dill weed

Oregano

Basil

Rosemary

Thyme

Fennel seed

Instructions

  1. Add all ingredients to crock pot.
  2. Let cook for 6-8 hours.
