My sweet tooth has always held up ice cream as the holy grail of desserts. Add chocolate into the mix? I may marry the bowl. Fast foward one year and one dairy-dissing stomach, however, and my taste buds have gone bananas…in the best of ways.

I’d heard of banana nice cream before from fellow allergy-friendly blogs or Instagram posts, but I always figured it would taste more like fruity ice than the Dairy Queen of my dreams. One desperate summer night, though, I threw some frozen naners, a little water, and a lot of hope into my blender…and out popped a delicious bowl of frozen delight.

Packed with nutrients and easily adaptable to every pair of picky tastebuds…it’s easy to see why I devour a tower of nanaicecream every day for breakfast or a post-workout treat.

Further Food Commentary:

This recipe has tons of fruits and veggies, making it a healthful treat that packs quite a punch of vitamins, minerals and anti-oxidants. The coconut and avocado add healthful fats, and the chia seeds and yogurt add some protein. This is a terrific mini meal, especially if it tastes as good as it sounds.

Ingredients

1 tablespoon chia seeds (ground for a smoother texture)
2 tablespoons coconut flour
3 tablespoons vanilla Greek yogurt (OR avocado for a dairy-free version)
2 handfuls (or more if tolerant) of greens
a handful of frozen fruit (chopped bananas, green fruits and veggies like apple, melon, zucchini, celery, and cucumber)
1/4 of an avocado
A few slices of orange or lemon
1/4 cup coconut milk
few drops of peppermint extract
a teaspoon of cacao powder
1 scoop of Further Food Chocolate Collagen (optional)

Optional:
String on sliced up strawberries, blueberries and pomegranate seeds for some festively edible decorations

Instructions

1. Gather and add all ingredients to blender. I like to layer mine by frozen fruit/vegetables, flour and chia seeds, leafy greens, more frozen fruit/vegetables, a scoop of yogurt and/or avocado, and finally any spices/flavorings plus the liquid of choice. Then push the button and ready your tastebuds for some healthy, allergy-free ice cream!
