Easy Coconut Rice

Ingredients

2 cups basmati rice
3 cups water
1 cup shredded coconut
2 teaspoon salt
2 cinnamon sticks
12 cloves
1 scoop of Daily Turmeric Tonic (optional)
1/4 cup coconut oil
1 teaspoon cumin

Instructions

  1. Soak the rice in cold water for 30 minutes.
  2. In a large saucepan, use half of the coconut oil and lightly toast the cumin, cinnamon sticks, coconut and cloves until they are fragrant, about 2 minutes.
  3. Drain the rice, and add it to the pot.
  4. Pour in water, bring to a boil, and cover.
  5. Simmer for 15-20 minutes.
  6. Once it is ready, use a fork to fluff it, and pour in the remaining coconut oil.
