Energizing Matcha Power Bites (Gluten free, dairy free)

Ingredients

1 cup walnuts
1 cup almonds
2 tablespoons ground flaxseeds
1 tablespoon Mindful Matcha
1 scoop Further Food Collagen  (optional)
1 teaspoon vanilla extract
1/8 teaspoon sea salt
4 tablespoons unsweetened almond milk
1/4 cup shredded coconut

Instructions

  1. Puree almonds and walnuts in food processor until mixture becomes crumbly.
  2. Add flaxseeds, matcha, collagen if using, vanilla extract and salt. Pulse until mixed.
  3. Add almond milk one tablespoon at a time until mixture forms into a dough.
  4. Roll into balls.
  5. If using, put coconut in small bowl. Roll balls into coconut and use hands to pat coconut into balls.
  6. Refrigerate for 1-2 hours until firm.
