It’s important to have a healthy option when you get afternoon cravings. These kale chips, along with raw nuts, will help satisfy your hunger in a healthy way and get you through to dinner. They’re low carb and diabetic friendly.

Chips are a go-to snack for many people because of their satisfying crunch. Many store-bought chips, however, are fried in highly refined oils and have deceptive portion sizes (who eats 6-8 chips?). Swapping them for homemade kale chips adds fiber, heart healthy potassium, vitamins A, K, C, B6 and iron to your snack routine. Tossing the kale in coconut oil makes fat soluble A & K more easily absorbed by your body well!

Ingredients

1 5 ounce bag organic kale
1/2 teaspoon pink himalayan salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon organic garlic powder
1/2 teaspoon dehydrated minced onions
coconut oil spray

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Spread the kale out on a large parchment lined baking pan.
  3. Spray it with coconut oil and sprinkle with seasonings. Don’t overdo the salt!
  4. Bake for 18-22 minutes, tossing with tongs a couple times through the baking process. The chips are done when they are crispy and starting to turn brown.
  5. Let the chips cool for a few minutes before serving. Enjoy!
