Sweet Potato and Orange Cookies

Sweet potato and orange is one of my favorite combinations. When I sought to create a unique, healthy, guilt-free cookie that I could share with my young son, it seemed like a winning combo. It was!

I love recipes with five ingredients or less especially when it comes to desserts! Whole foods taste great, no need for added preservatives or simple sugar! This recipe is loaded with antioxidants, fiber and vitamin C all of which help your immunity, fight free radicals and prevent disease! Additionally there is no milk or dairy used in this recipe which makes it eczema friendly! Who doesn’t love a guilt-free sweet treat?

Sweet Potato and Orange Cookies

  • Prep Time: 20 mins
  • Cook Time: 10 mins
  • Servings: 12

Ingredients

1 cup medjool dates (soaked and pitted)

2 cups desiccated coconut

2 medium sweet potatoes (boiled)

zest and juice from 2 medium oranges

Instructions

  1. Preheat oven to 300 degrees F.
  2. Combine dates and coconut in food processor, blend for one minute, scrape sides and blend for another minute.
  3. Add orange juice, zest and sweet potato and process until well combined, scraping sides as necessary.
  4. Form into cookie shape and arrange on tray.
  5. Bake for 8–10 minutes or until golden (check the underside as this burns first).
  6. Let cool and enjoy!
