Sweet potato and orange is one of my favorite combinations. When I sought to create a unique, healthy, guilt-free cookie that I could share with my young son, it seemed like a winning combo. It was!

Sweet Potato and Orange Cookies
1 cup medjool dates (soaked and pitted)
2 cups desiccated coconut
2 medium sweet potatoes (boiled)
zest and juice from 2 medium oranges
- Preheat oven to 300 degrees F.
- Combine dates and coconut in food processor, blend for one minute, scrape sides and blend for another minute.
- Add orange juice, zest and sweet potato and process until well combined, scraping sides as necessary.
- Form into cookie shape and arrange on tray.
- Bake for 8–10 minutes or until golden (check the underside as this burns first).
- Let cool and enjoy!
