Arugula, Cabbage, Avocado Salad with Grapes

This combination is a no-brainer!  The sweetness of the grapes pairs so well with the peppery bite of the arugula. I do not use dressings on my salads, opting instead to use avocado, hummus or pureed fruits to add a creamy flavor and texture. This salad is so delicious and refreshing that next time I’ll be making a ginormous bowl of it!

Pairing salad greens with fruit is a delicious way to dress up any salad. Fruit not only adds sweetness, but also enhances a salad’s nutrition profile. Adding fruit to salad increases the antioxidant, fiber, vitamin and mineral content. Citrus fruits, in particular, play an important role when paired with lettuce greens. Citrus fruits contain vitamin C, which has been shown to increase the absorption of iron found in green leafy vegetables. This recipe is beaming with vitamin C from not only the lemon juice, but also the red cabbage. Another nutritious addition to this salad is the avocado. Fat soluble vitamins found in lettuce greens depend on the presence of fat in order to be absorbed. No dressing? No problem! Avocado is a healthy fat that can aide in the absorption of those vital fat soluble vitamins.

Ingredients

2 cups arugula

1 cup red cabbage (shredded or chopped)

½ avocado (sliced)

10 green grapes (halved or whole)

½ lemon (juiced)

pepper (to taste)

Instructions

  1. In a large bowl, toss all ingredients together.
  2. Sprinkle with freshly ground pepper.
  3. Serve immediately.
