In the winter I love to roast most vegetables because it brings out a sweet flavor to the dish. I’ve been on a curry kick lately, adding it to most of my soups and poultry as well. Curry powder has been shown to reduce inflammation as it contains a significant amount of Turmeric. Curry powder is also a powder aid for the digestive tract. It has been shown to help with diarrhea and indigestion.

Just one cup of cauliflower contains 21 calories, a boasting 24% of recommended intake of vitamin C and 43% of recommended intake of healthy eyesight promoting lutein and zeaxanthin. In addition, with the use of oregano, one obtains an excellent amount of vitamin K and manganese, which plays a role in reversing affect of ‘blood thinning’ medications. As an edible oil that's pressed from the fruit, avocado oil is a good carrier for other flavors and is high in monounsaturated fats and vitamin E. In addition, it enhances the absorption of carotenoids and can be a great substitute for olive oil.

Ingredients

1 head of fresh cauliflower (chopped into florets)
2 tablespoons avocado oil
3 teaspoons of curry powder
¼ teaspoon of sea salt
¼ teaspoon of black pepper

Instructions

1. Preheat oven to 375 degrees.
2. Toss florets with avocado oil, curry powder, salt and pepper. Make sure florets are coasted evenly with the curry powder.
3. Place on a baking sheet and roast for 40 minutes, until cauliflower is crisp, tender, and caramelized to your liking
