I’m always looking for lower carb, healthy recipes that my kids will enjoy! These gluten free chocolate chip almond butter cookies are perfect for an after school snack!

One bite of these chocolate chip almond butter cookies is all it takes to realize what a healthy indulgence they are. This recipe contains all of the good stuff- heart healthy flavonoids from the dark chocolate and vitamin E from the almond butter - much better than the ingredients that typically characterize store-bought cookies. They’re the perfect bite-sized afternoon treat for children and adults alike and will leave you feeling satisfied without any of the guilt!

Chocolate Chip Almond Butter Cookies (gluten free)

Ingredients

Wet Ingredients:

3 eggs
1/2 cup of unfiltered honey
1 teaspoon vanilla
1 cup raw almond butter (crunchy is fine)

 

Dry Ingredients:

1 1/2 cups gluten free baking mix
1/2 teaspoon sea salt
1 teaspoon baking powder
2/3 cup xylitol
1 cup blanched almond flour
1 cup dark chocolate chips

Instructions

  1. Heat your oven to 350 degrees F, and line your baking sheets with parchment paper.
  2. Stir together all of the wet ingredients and dry ingredients separately, then combine them.
  3. Scoop out the cookie dough onto your parchment lined baking sheets in 2 tablespoon chunks. Give them some space to spread out!
  4. Bake for 13-15 minutes. The cookies will get puffy, then flatten out. They taste the best if you remove them from the oven when they are starting to fall, but still a little puffy. Enjoy!
