I really don’t like wasting food, so nori wraps are the perfect way to use up little bits of leftovers and vegetables in an exciting and healthy way.

Seaweed is high in Iodine which supports the thyroid. It's also high in vitamin A, C and a good source of calcium. Black sesame seeds are an integral food in Chinese medicine to promote the liver, spleen, and kidney meridians. Because they support the kidney essence they are believed to be anti-aging and support the adrenal glands. In western medicine, they are high in healthy fats, vitamin E and minerals such as calcium, magnesium and phosphorus.

Ingredients

Nori papers
Spread of your choice: hummus, pesto, tahini
Assortment of vegetables: sprouts, grated carrots, sliced cucumbers, avocado, peppers
Fresh herbs: cilantro, basil, dill, parsley
Toppings: hemp hearts, black sesame seeds, white sesame seeds, pumpkin seeds. slivered almonds

Optional: a grain such as quinoa or brown rice

Instructions

  1. Take a nori sheet.
  2. Start with your chosen spread.
  3. Layer veggies on top.
  4. Sprinkle on some toppings
  5. Roll up the papers and seal using a little water to wet the edges.

    I just made these for dinner tonight – so glad I finally found a way to use the Nori wraps sitting inside my cabinet! I used brown rice, black beans, lots of roasted veggies, avocado and salmon – it was delicious! Love the twist of using a different wrap than the typical tortilla.
