Creamy Broccoli Soup


When the weather gets chilly there is nothing better than having a warm bowl of creamy soup. What I love most about this recipe is that its made in the crock-pot, so all you have to do is throw all the ingredients in and let it cook! This recipe is dairy-free which is why I created it. I used coconut milk in place of milk and it came out absolutely delicious!

This is a great gluten free and dairy free soup. The onions, garlic, and broccoli are all chock full of vitamins and anti-cancer properties. The three of them also have a lot of sulfites and FODMAPs, which can aggravate the digestive track of sensitive people.

1 whole broccoli (chopped in florets)
1 small sweet onion (diced)
3 garlic cloves (minced)
1 cup of vegetable broth
1 can of coconut milk
1 tablespoon of dried basil
salt/pepper (to taste)

Optional: pine-nuts to garnish


  1. Slow cook on high for three hours.
  2. Let cool and puree in the blender!
  3. Top with pine-nuts and enjoy!
